MARKET COOKING CLASS IN PROVENCE

Your cooking adventure starts on food market in Avignon historic quarter.
Meet the Chef on the market at 9:30am for experiencing the food shopping and discussing about your likes, dislikes, food restrictions or allergies.
The menu is created on the market accordingly.

Provence is a blessed region for growing organic tasty vegetables, fruits, and aromatic herbs. The countryside is popular for livestock and goat cheese farms, as the Mediterranean coast offers the freshest fishes and shellfishes.

On strolling across the market, the Chef explains how to choose the ingredients, considering the freshness and prices. You won’t miss tastings at a few of the chef’s favorite purveyors while discussing the specialties of Provence.

Back to the cooking school after a one-hour food shopping, you will tight your apron, wash hands and partake in a hands-on class celebrating the delightful Mediterranean and Provence cuisine.

You will prepare and cook a 3-course menu (aperitif, main course and dessert).
Sample menu can include:
– Ratatouille tart with fresh basil and sun-dried garlic
– Lime-flavored salmon paté
– Pissaladière (onion tart with anchovies and black olives)
– Rolled fish fillets with asparagus, olive oil and lemon emulsion
– Roasted peaches, aspic of granny smith and tea
– Pistachio and red berries crumble.

The class is taught in English and it’s designed for amateurs.
After your class, you will be invited to sit for enjoying the lunch you have cooked under the Chef’s direction.
Tasting lunch is accompanied by la glass of local wine, mineral water, tea or coffee.
