Welcome to The Villa of Flavors cooking school, a beautifully restored 19th-century farmhouse surrounded by magnificent gardens, located in a quaint hilltop village nearby Bandol and Sanary-sur-Mer on the Mediterranean.
Choose the day in our calendar below to learn about different topics such as Meat, Fish, Vegetables, Pastry and dessert. Everything you will prepare and cook uses fresh produce which follow the seaons. Asparagus, artichokes, rhubarb, cherries… start in April and May. In summer, you are lucky with berries, peaches, apricots, tomatoes, eggplants, zucchinis, and more. If you come in September, you will have the figs, grapes, and some summer vegetables and fruits still. October is the beginning of autumn bringing vegetable roots, mushrooms, plums, apples and pears, but not only. Fish is bought directly at the fishermen booth at the harbor. The lamb is bought at the farms in Sisteron. Honey, goat cheese, olive oil are from the producers in the village… and the aromatic herbs grow wild in the nature, and in the school's garden.
Cooking classes are scheduled Monday to Thursday, starting at 9:00am. You will learn how to compose, and to cook different menus celebrating the Provence and Mediterranean cuisine. You will review the basic methods under our chef direction. The class is followed by a delicious 3-course lunch accompanied by wine. Provence is wellknown for its warm weather and you will have lunch on the patio, enjoying the scents of Provence. Classes are hands-on, taught in English. It's limited to 10 people. Recipes are in English.
Monday > MEAT CLASS – Explore the vegetables and herbs gardens, smell and pick aromatic herbs, medical plants, vegetables and fruits. Aside to a simple starter and dessert that you will prepare, your class focus on the meat. You will prepare a Provence stew, and a roast lamb or beef that you will taste afterwards.
Tuesday > FISH CLASS – Join our Chef in Sanary-sur-Mer. Visit its typical food market and meet the producers, the fishermen, and smiling local people. After this fun shopping, back to the cooking school to prepare a delicious lunch cooked with the freshest produce that you and the Chef have bought. Tasting lunch accompanied by wine follows the class
Wednesday > VEGETABLES – Tasty, juicy, colorful, and flavorful vegetables are the best in the south of France as it's picked up ripe. Listen and keep our Chef's tips in mind… he will explain how to succeed in your recipes. It will be useful when you will make these recipes at home. Lunch at the school.
Thursday > PASTRY & DESSERT – You will learn how to prepare and to bake two French classics such as a tart and a lava cake. 3-course lunch (including pastry you have baked) accompanied by wine follows the class.
